Easy & Delicious Vegan Curried Chickpeas

These Curried Chickpeas are vegan, gluten-free, unbelievably fast, simple, healthy and so tasty! Perfect alone for lunch, with rice or salad for dinner, or even as a side dish or a starter, this recipe is incredibly versatile and satisfying. No doubt about it, you will feel full after you eat these! Natural and unprocessed, chickpeas are high in fibre, a source of protein, and have so many health benefits. Plus, a lot of the spices and herbs used in this recipe boast great benefits in their own right.

This recipe serves one, or two if having small portions, so just adjust accordingly if you are cooking for multiple people. There are only three steps to this low maintenance dish and you will only need one pot/saucepan. Cooking and preparation time included, these curried chickpeas take less than 20 minutes in total to whip up.

Ingredients:

> 240g Chickpeas, cooked or drained and rinsed if from a can.

> 1/2 TSP Salt.

> 1 TSP Ground Black Pepper.

> 3 TBSP Olive Oil.

> 4 Cloves (whole).

> 1 TBSP Tikka Masala Powder.

> 1 TSP Garam Masala.

> 3 TSP Parsley.

> 1 TSP Ground Turmeric.

> 1 Garlic Clove, crushed or minced.

> 1 TSP Chilli Powder.

Method:

1) Transfer all of the ingredients into a saucepan or pot, and put on the hob on a low heat.

2) Cook for 10-15 minutes, stirring regularly to ensure that every chickpea is coated with the dry sauce.

3) Leave to cool for 1 minute before serving. Enjoy!
