Creamy Vegetable Soup

This Creamy Vegetable Soup is rich, healthy, vegan, gluten-free and delicious. Simple and quick to whip up, this dish will leave you feeling full and satisfied. A great option for days when you’re strapped for time but want to eat well, or when you are craving something hearty but lighter than a big meal.

I love to create easy blend soups that can be made quickly. In this case, this recipe only takes around half an hour from beginning to end. This soup can also be frozen, or kept overnight in the fridge for the next-day. This recipe serves 2 large dinner-sized portions, or 4 smaller lunch portions. A little goes a long way and this meal will leave you feeling energised and full of nutrients. A top tip – you can add your own protein powder to this dish during the blending stage to sky-rocket your protein intake.

Ingredients:

> 2 Large White Potatoes (but you can use any you want, as long as they can be boiled soft), peeled and cubed.

> Spinach – if using fresh 2 large handfuls; if using frozen 3 whole clumps.

> 2 handfuls of Peas.

> 2 handfuls of Sweetcorn.

> Carrots – 2 chopped if using fresh; 2 handfuls if using frozen.

> 5 Broccoli Florets.

> 4 Cauliflower Florets.

> 300ml Vegetable Stock.

> 100ml Single Plant Cream.

> Salt and Pepper.

Method:

1) Put potatoes in a saucepan and cover with cold water. Bring to the boil and boil on for 15 minutes.

2) Add all of the other vegetables into the water, and continue to boil for 5 minutes.

3) Drain the vegetables and allow to cool for five minutes. Add to a blender/food processor along with the vegetable stock, and blitz until a smooth, thick liquid.

4) Pour the soup back into a saucepan and onto a low heat on the hob. Stir in plenty of salt, pepper and the plant cream. At this point you can add more water if you want a thinner consistancy but I personally prefer it that bit heavier.

5) Stir regularly until heated through to liking, remove from the hob and serve. I had mine with some gluten-free bread rolls, which went down well, but you can easily eat it alone or with whatever you like. Bon appétit!
