This recipe is so quick and easy, while being much healthier than shop-bought baked beans. Completely vegan and tasty, these are a comfort food staple! Plus, if you make too much, you can freeze them – this recipe serves two. I personally use a blender as I like a smooth sauce but I’m sure you can go without if you want a chunky sauce. Enjoy!
Ingredients:
- Haricot Beans – 400g tin.
- Chopped Tomatoes – 400g tin.
- Tomato Puree – 3 tablespoons.
- Caster Sugar – 4 teaspoons.
- Salt – 1/2 teaspoon.
Method:
Drain and rinse the tinned beans. Blend the chopped tomatoes with the tomato puree and 3 teaspoons of caster sugar. Combine beans and sauce together in a saucepan. Add the salt and the last teaspoon of sugar. Cook on the hob on a medium heat for 5 minutes, stirring frequently. Reduce heat slightly and allow to simmer for a further 5-7 minutes, partially covering with a lid and stirring occasionally.
